This recipe is versatile to set the oven alongside anything else you may be baking, however the potatoes come out crunchier if they are baked in the hotter oven. The lower heat also takes longer.
In a bowl large enough for tossing cut potatoes, combine:
1-3 T. olive oil, depending on how many potatoes you are cooking
Place on cookie sheet and bake on top rack of oven, at 425 for 45 min. to an hour, or 350 for 60-90 minutes or until desired brownness.
When you take them out of the oven, serve with salt to taste.
For beef flavored roast potatoes, instead of oil, melt butter with a smidgeon of beef bouillion paste and toss potatoes in the mixture, along with garlic powder and paprika if desired.
For spicy potatoes, sprinkle with a hotter paprika or mix oil with 1/4 tsp. cayenne.
