Baked Stuffed Squash

Cut and remove seeds from 3 Acorn Squash
Bake upside down on an oiled cookie sheet at 350 for 45 minutes.

Meanwhile, saute:

3 T. butter
2 Cups diced onion
2 cloves garlic
2 stalks celery
1 t. salt
1 t. pepper
1 t. each sage, thyme

Add 1 lb. cooked sausage
Add 1 cup cooked rice or breadcrumbs

Fold in nuts, sunflower seeds, raisins to taste.
Fold in tiny cubes of a good melting cheese (such as jarlsberg)

Stuff into baked squashes and reheat for 30 minutes covered and serve.
