Beef Borscht

Boil and simmer for 1 hr:

Meaty Beef Bone in 6 cups beef broth
2 cups young beer or Mead
1 1/2 cups tomato sauce
1 tsp. diced gingerroot
1 tsp. garlic powder or fresh to taste

Meanwhile, saute for 7 minutes:

1 1/2 cups carrots, julienned
3 stalks celery
4 cups onions, julienned
2 peeled julienned beets

Add 2 more peeled beets with 1 T. balsamic vinegar

Add all of the above to the broth wiith 1 T. honey and diced or baby halved potatoes if desired.
Cook for 1 1/2-2 hrs.

Serve with sour cream and dill if desired.
