Thin slice and peel 6 cucumbers.
Salt them generously and weight them down for several hours to draw the water out.
Rinse the salt.
Squeeze them dry .
Fold in one thin sliced red onion.
Toss in the following dressing:
1 cup sour cream
1T. plus 1 tsp. dried dill
2 T. red vinegar
salt and pepper to taste
