Cardamom Peach Butter

Puree 1 peck  Peeled Peaches.

In large pot, heat  1/3 cup lemon juice to boiling.
Add peaches and 5 cups sugar, and bring to a boil.
Add 2 tsp. to 1 Tablespoon each cardamom, cinnamon, nutmeg plus a pinch of allspice and cloves.
Cook until thick like applesauce, at least 20 minutes.

Ladle into clean jars with 1/4 inch space, place lids and screw on firmly.

Process for 10 minutes.

Yield 12-13 jars, (8oz.)
