Herbed Pork Loin Roast

Allow 2 hours for a 3-4 lb. roast loin pork

Rub roast with:

1 tsp. garlic powder
1 tsp. onion powder
1 1/2 tsp. thyme

Bake at 325 then add potatoes:

Boil potatoes  for a little while and toss with olive oil, thyme, chives and garlic powder, and place around roast for the next 60 minutes.

Cover and let stand for 15 minutes before slicing.
