Pad Thai


3 T. sugar
5 T. fresh lime
fish sauce

Soak rice noodles according to directions.
Plunge 1/2 lb. snow peas in cold water. Rinse and slice in long diagonals.

In Wok:

1/2 cup oil
1/2 lb. sliced chicken, cook for 30 seconds
1 T. garlic
1/2 lb. shrimp
1/2 cup diced tofu
2 eggs beaten and poured int he middle

Fold in noodles
Add snow peas, scallions and bean sprouts as desired

Add 1/2 cup peanuts
1/8 - 1/4 cup cilantro

Add sauce and a hot chili pepper
