Sauces for Fish

Sauce One for cooking over fish:

Whisk together:

1 cup yogurt
3 T. Dijon
2 T. fresh chopped herbs: chives, parsley, tarragon, or thyme
2 T. fresh lemon or lime juice

Bake in 325 oven over fish until done.


Sauce Two, a cold one!

Peel and chop one cucumber and place in strainer over a bowl..
Add salt and allow to drain for 1/2 hour.

Place in a bowl and add:

1 cup sour cream
2 T. dill
1 T. chives
2 T. scallions
1 T. wine vinegar
salt and pepper to taste
