Marinate 1 1/4lb. salmon, skin side up( in glass dish) for 2-4 hours in:
1/6 cup dry white wine
1/6 cup fresh orange juice
1 1/4 Tablespoons soy sauce
Bring to room temperature before cooking.
Bake at 450 on foiled baking sheet, skin side down, sprinkled with salt and pepper for 20 minutes or until fish is just opaque in center.
Lift from foil onto platter.
Mound the following relish on top of fish:
1/4 cup matchstick-size strips of red pepper
1/4 cup thinly sliced red onion
1 1/4 tsp. fresh cilantro or parsley
1 tsp. minced peeled fresh ginger
1 tsp. grated orange peel
1 tsp. sesame oil
1/4 tsp. sea salt
1/8 tsp. dried crushed red pepper
1-2 large navel oranges with pith and peel removed.
