Place 1-1 1/2 lb. salmon in baking dish.
Roll a pie crust to fit over the top of the salmon, and crimp edges.
Melt 1/3 cup butter and add:
2 cloves minced garlic
a T. tarragon
1 T. chervil
Brush herbed butter over pastry, and bake in 400 oven for 20-25 minutes.
Sprinkle with parsley and surround with lemon wedges.
