Plum Tart Rustica

Prepare pate brisee crust for a double crusted 8 in. pie pan, and after chilling, roll out one large 14 inch circle.

Wash, pit and quarter 2 1/2 lb. Italian prune plums.

Toss with:

1/3 cup flour
1/2 cup granulated sugar
1/4 tsp.nutmeg
juice of 1/2 lemon

Mound plums on chilled pastry.
Dot with butter and fold overhang up and over the fruit.
Brush pastry with cream or milk. Dust with sugar.
Bake 40 min at 400 or until bubbly.
