Lemon Bread

Mix together the wet with the dry ingredients, just until blended.

Wet ingredients:

2 beaten eggs
1/2 cup milk
1/2 cup vegetable oil
zest of one lemon

Dry ingredients:

2 cups flour
1 1/2 cups sugar
1/2 tsp. baking powder
1/4 tsp.salt

Fold in 1 1/2 - 2 cups blueberries if desired.

Pour into greased and floured large loaf pan.
Bake at 350 for 45 minutes or until tests clean in center.

Remove from oven, poke holes on top and pour lemon glaze to coat top.

Lemon Glaze: mix together 1/4 cup lemon juice with 1/4 cup sugar or heated honey.
