Lime Pistachio Rolled Christmas Cookies

Cream together:

1 cup butter
1 cup sugar

Stir in:

2 cups flour
1 tsp. lime peel

Mix in 1 cup finely chopped pistachios

Refrigerate batter one hour and roll to 1/4 inch.

Bake at 375 for 8-10 minutes

Drizzle with melted semisweet chocolate, or make a lime icing to pipe around the edges:

Lime Icing:

Beat together 1/4 cup softened butter with 2 1/2 cups confectioners sugar.
Add 2 T. milk and 1/2 tsp lime zest.
