Ricotta Cake (Moosewood Lowfat cheesecake)

Butter 10 in. Springform pan.
Dust with flour, fine crumbs, or ground almonds.
Preheat oven to 375.

Beat 4 egg whites until Stiff buy not dry. Set aside.

Beat together:

2 lbs.ricotta, lowfat o.k.
4 yolks, optional
!/2 cup sugar
1/3 cup flour
1 1/2 tsp.vanilla
1/4 tsp. almond extract
1/4 tsp. salt
1/2 tsp. orange and lemon rinds
2 Tblsp. lemon juice

Gently fold in egg whites.
Bake for 50 minutes or until solid in center.

This tastes best cold.
A berry sauce is optional.

Berry sauce:

     Puree and place through sieve:

     1 cup fresh or defrosted berries
     1-2 Tblsp. sugar
     a few drops fresh lime or lemon juice
