Pound Cakes

This recipe is for making several cakes at once to have on hand for trifles or simply for sudden drop in visitors for tea.
Beat the butter and shortening in the mixer, along with the sugar and vanilla, and then move to a large bowl and proceed by hand.

For 7 small yellow one lb. cakes, or 3 large bread pans:             For 7 small chocolate one lb. cakes, or 3 large bread pans:

1 lb. butter                                                                                                1 lb. butter
13 oz. shortening                                                                                    13 oz. chocolate

Add:                                                                                                          Add:  

2 lb. sugar  (4 cups)                                                                                2 lb. sugar (4 cups)
4 tsp. vanilla                                                                                             4 tsp. vanilla plus 1/4 cup water

Add 2 lb. eggs, one at a time until absorbed into batter.               Add: 2 lb. eggs, one at a time until absorbed

Add 2 lb. cake flour (8 cups).                                                               Add:

Bake at 350 for 35 min. to one hour, depending on size.                          2 lb. cake flour (8 cups)

                                                                                                                             1 1/2 t. baking soda
                                                                                                                             1 cup water
