3 cups flour
1/3 cup + 2T. sugar
2 1/2 tsp. baking powder
1/2 tsp. baking soda
3/4 tsp. salt
zest of orange or lemon if desired
Cut in 3/4 cup cold butter until mixture resembles cornmeal.
Make a well in the center, and rake in one cup buttermilk.
Fold in desired fruits, such as currants, raisins,chocolate chips and orange rind, cinammon apple etc.
Make one large flattened circle and divide into 8 wedges, or make two smaller circles and cut into 2 sets of 6 wedges for smaller scones.
Bake at 425 for 10 minutes or more on a cookie sheet until light brown.
