Challah Bread

Dissolve 1 T. instant yeast in 1 1/3 cups water (5-10 min.)
Whisk in:

1/4 cup honey
2 1/2 tsp. salt

Place all of the above into the mixer bowl with:

2 whole eggs, beaten
2 yolks, beaten
1/3 cup oil

Attach dough hook.

Knead in 7 or more cups of flour (approximately 8-10 minutes) until dough is will be sticky because of the eggs.

Shape into two loaves or braids.

Bake loaves or braids at 350 for 25-35 minutes.

Brush with beaten egg white and water wash for shiny effect. Top with poppy seeds if desired.
