Pesto and Ricotta Cheese Spread

Make Pesto in Food Processor:

1/2 cup basil leaves, packed, cleaned and dried
1/2 cup Parmesan cheese 
1/4 cup roasted pine nuts (heated and lightly toasted in a frying pan or toaster oven)
3/4 tsp. Garlic
3/4 cup olive oil
1 tsp. Salt
1/2 tsp. Pepper

In mixing bowl, fold in 1-2 cups ricotta cheese to desired blend.
